- 3 boneless, skinless chicken tenders
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 2 medium red potatoes, chopped (with skins)
- 2 tbsp butter
- 1/4 cup milk
- 1 cup baby carrots, halved
- 1 cup fresh green beans, trimmed
- 1 tbsp olive oil (for veggies)
- 1 tsp Italian seasoning
- Salt and pepper, to taste (for veggies)
Instructions
- Rub the chicken with olive oil, garlic powder, smoked paprika, salt, and pepper. Sear the chicken in a skillet over medium-high heat for 3-4 minutes on each side until golden brown and juicy.
- Boil the chopped red potatoes until they are fork-tender, approximately 12-15 minutes.
- Mash the hot potatoes with butter, milk, salt, and pepper until creamy and smooth.
- Toss the carrots and green beans in olive oil, Italian seasoning, salt, and pepper. Roast them in the oven at 400°F for about 20 minutes.
- Arrange the chicken tenders, mashed potatoes, and roasted veggies on a plate. Drizzle any pan juices over the chicken for extra flavor.
Notes
For extra flavor, marinate the chicken for 30 minutes before cooking. Feel free to switch the veggies based on your preferences.
