A quick and tasty meal featuring garlic herb chicken and roasted broccoli over a bed of rice or quinoa.

- 2 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 cup cooked rice or quinoa
- Lemon wedges (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Coat the chicken breasts with the garlic herb mixture.
- Arrange the broccoli florets on a baking sheet, drizzle them with olive oil, and season with salt and pepper.
- Place the chicken on the same baking sheet.
- Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the broccoli is tender.
- Serve the chicken and broccoli over a bed of cooked rice or quinoa, and squeeze lemon juice over the top.
Notes
Make sure to not overcrowd the baking sheet for even cooking. You can marinate the chicken for deeper flavor.
