Ingredients

- 1 tbsp sesame oil
- 4–5 baby bok choy, chopped
- 1 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, sliced
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp brown sugar (optional)
- 1/2 tsp crushed red pepper flakes
- 1 tsp toasted sesame seeds
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic, grated ginger, and sliced green onions. Stir-fry for 1 minute.
- Add the chopped bok choy and stir-fry for 3–4 minutes until it is slightly wilted but still crisp.
- Stir in the soy sauce, rice vinegar, and brown sugar. Toss everything to coat and cook for 2 more minutes until heated through.
- Drizzle with sesame oil and sprinkle red pepper flakes and sesame seeds on top. Serve hot as a side or over rice!
Notes
Chop bok choy into even pieces for uniform cooking. Adjust the red pepper flakes for heat. You can add other vegetables or proteins for variation.
