Description

A quick and tasty dish combining garlic, feta cheese, and fresh cherry tomatoes on a crispy pita base.


Ingredients

  • 2 whole wheat pita breads or flatbreads
  • 1 tbsp olive oil (for brushing)
  • 1 garlic clove, halved
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brush each pita bread with olive oil.
  3. Rub the halved garlic clove over the surface of the pita bread.
  4. Spread the crumbled feta cheese evenly on the pita.
  5. Top with halved cherry tomatoes.
  6. Place the pita on a baking sheet and bake for 10-12 minutes, until the edges are crispy and the cheese is slightly melted.
  7. Remove from the oven and garnish with fresh basil leaves.
  8. Cut into wedges and serve warm.

Notes

Great with a side of hummus or tzatziki. Store leftovers in an airtight container in the refrigerator for up to 2 days.
