Description

A delicious and easy-to-make flatbread that combines feta cheese and cherry tomatoes on a crispy pita base, perfect for snacks or appetizers.


Ingredients

  • 2 whole wheat pita breads or flatbreads
  • 1 tbsp olive oil
  • 1 garlic clove, halved
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brush each pita bread with olive oil on one side.
  3. Rub the halved garlic clove over the oiled sides of the pita.
  4. Spread the crumbled feta cheese evenly over the pitas.
  5. Top with halved cherry tomatoes.
  6. Place the pitas on a baking sheet and bake for 10-12 minutes or until the edges are crispy.
  7. Remove from the oven, garnish with fresh basil leaves, and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350°F (175°C) for a few minutes until warm and crispy.
