Ingredients

- 1 lb chicken breasts
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 cups broccoli florets
- 1/2 cup cherry tomatoes, chopped in half
- 1 cup spinach
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook for about 1 minute, until fragrant.
- Place the chicken breasts in the skillet and cook until golden brown and cooked through, about 5-7 minutes on each side.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add broccoli florets and cook for 3-4 minutes until bright green and slightly tender.
- Add cherry tomatoes and spinach, cooking until the spinach wilts.
- Return the chicken to the skillet, mixing everything together.
- Season with salt and pepper to taste, and serve hot.
Notes
For serving, plate with brown rice or quinoa, and garnish with extra garlic or lemon juice if desired. Store leftovers in an airtight container for up to 3 days.
