Ingredients

  • 1 lb boneless chicken breast, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp garlic, minced
  • 1/2 onion, diced
  • 1/2 red bell pepper, chopped
  • 1 small zucchini, chopped
  • 1 cup broccoli florets
  • Salt & black pepper to taste
  • 1 tsp paprika or chili flakes (optional)
  • Cooked white or brown rice (1–2 cups)

Instructions

  1. Heat olive oil in a large skillet on medium-high. Toss in the sliced chicken, season with salt, pepper, and paprika. Sear until golden.
  2. Add minced garlic and chopped onion. Stir-fry until aromatic.
  3. Add broccoli, bell pepper, and zucchini. Cook until just tender.
  4. Drizzle with soy sauce and toss everything together for 2–3 minutes.
  5. Serve hot with rice.

Notes

For extra flavor, let the chicken marinate in soy sauce and garlic for 15-30 minutes before cooking. Adjust the garlic and spices to suit your taste.
