- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp garlic, minced
- 1/2 onion, diced
- 1/2 red bell pepper, chopped
- 1 small zucchini, chopped
- 1 cup broccoli florets
- Salt & black pepper to taste
- 1 tsp paprika or chili flakes (optional)
- Cooked white or brown rice (1–2 cups)
Instructions
- Heat olive oil in a large skillet on medium-high. Toss in the sliced chicken, season with salt, pepper, and paprika. Sear until golden.
- Add minced garlic and chopped onion. Stir-fry until aromatic.
- Add broccoli, bell pepper, and zucchini. Cook until just tender.
- Drizzle with soy sauce and toss everything together for 2–3 minutes.
- Serve hot with rice.
Notes
For extra flavor, let the chicken marinate in soy sauce and garlic for 15-30 minutes before cooking. Adjust the garlic and spices to suit your taste.
