Ingredients

  • 1 lb boneless chicken breast, cut into bite-size pieces
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup broccoli florets
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1/4 cup cream or half & half
  • 1 tbsp butter (optional)

Instructions

  1. In a hot skillet with olive oil, toss in the chicken seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until golden and juicy.
  2. Add chopped bell peppers, onion, zucchini, and broccoli to the skillet. Sauté everything together for 6-8 minutes until the veggies are tender-crisp.
  3. Add a splash of water or chicken broth if the pan gets dry. Let the flavors mingle for a few extra minutes.
  4. Stir cream (and butter, if using) into your hot cooked rice. Mix well until creamy and smooth.
  5. Serve your garlic chicken veggie stir-fry next to a scoop of creamy rice.

Notes

Cut the chicken and veggies into similar-sized pieces for even cooking. Feel free to swap out vegetables based on preference.
