Ingredients

- 2 chicken breasts, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, minced
- 2 cups cooked rice
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the sliced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables and stir-fry for another 3-4 minutes until the veggies are tender-crisp.
- Pour in the soy sauce and stir everything together.
- Serve the stir-fry over cooked rice.
Notes
Consider adding a sprinkle of sesame seeds or chopped green onions for extra flavor and presentation. Store leftovers in an airtight container for up to 3 days.
