Ingredients

  • 2 chicken breasts, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • 2 cups cooked rice
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Add the mixed vegetables and stir-fry for another 3-4 minutes until the veggies are tender-crisp.
  5. Pour in the soy sauce and stir everything together.
  6. Serve the stir-fry over cooked rice.
