Description

A quick and healthy garlic chicken stir-fry served over rice and broccoli, packed with protein and colorful vegetables.


Ingredients

  • 1 lb chicken breast, thinly sliced
  • 1 cup green bell pepper, sliced
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup carrot, sliced
  • 1/2 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1.5 cups steamed white rice
  • 1 cup steamed broccoli florets

Instructions

  1. In a large skillet, heat olive oil on medium. Toss in garlic, onions, and carrots first. Stir-fry until slightly softened.
  2. Add the red and green bell peppers and stir-fry for 4-5 minutes.
  3. Add sliced chicken, black pepper, and soy sauce. Stir often and cook for 6-8 minutes until tender and golden.
  4. Drizzle in the oyster sauce (if using) and cook for an additional 2 minutes.
  5. Serve hot with rice and broccoli.

Notes

Slice chicken and veggies thin for faster cooking. Use fresh garlic for the best flavor.
