Description

Ingredients

  • 1 boneless, skinless chicken breast
  • 1 cup cooked white rice (jasmine or basmati)
  • 1 cup green beans, trimmed
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & black pepper to taste
  • Optional: squeeze of lemon or drizzle of sriracha for extra flavor

Instructions

  1. Season the chicken breast with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for 6–7 minutes per side.
  2. Steam green beans until tender-crisp, or sauté in a pan with olive oil, salt, and pepper for 5–7 minutes.
  3. Prepare the rice according to package directions, fluff with a fork, and plate as the base.
  4. Once cooked, slice the chicken into strips and lay it over the rice.
  5. Add the green beans to the side and top with lemon or hot sauce if desired.

Notes

Marinate the chicken for a few hours or overnight for even more flavor. Add more vegetables like bell peppers or carrots for added nutrition.
