- 8 oz lo mein noodles
- 2 tablespoons sesame oil
- 1 lb chicken breast, thinly sliced
- 1 tablespoon cornstarch
- Salt and pepper to taste
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1 cup snap peas
- 4 cloves garlic, minced
- 2 green onions, sliced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper (optional)
Instructions
- Cook the lo mein noodles according to package instructions. Drain and set aside.
- In a bowl, toss the sliced chicken with cornstarch, salt, and pepper.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for 5-6 minutes until golden and cooked through. Remove the chicken and set it aside.
- In the same pan, add the remaining sesame oil. Stir-fry the minced garlic for 30 seconds until fragrant.
- Add the sliced bell pepper, shredded carrots, and snap peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
- Return the chicken to the pan along with the cooked noodles.
- In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sugar, rice vinegar, and crushed red pepper (if using). Pour this sauce over the stir-fry and toss everything together to coat evenly.
- Cook for another 2-3 minutes, stirring often, until everything is heated through and coated in sauce.
- Garnish with sliced green onions and serve hot.
Notes
Feel free to customize with other vegetables or proteins as desired. Best served hot right after cooking.
