- 1 lb ground beef
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 12 oz rigatoni pasta
- 1 1/2 cups heavy cream
- 1 cup shredded mozzarella cheese
- 3/4 cup grated Parmesan cheese
- 1/2 cup reserved pasta water (if needed)
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a pot of salted water to a boil. Cook the rigatoni until al dente according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until it’s browned. Season with salt, pepper, garlic powder, and onion powder. If there is excess grease, drain it off.
- Add butter and minced garlic to the skillet with the beef. Sauté for 1–2 minutes until fragrant.
- Lower the heat to medium and pour in the heavy cream. Let it simmer for 2–3 minutes, then stir in the mozzarella and Parmesan cheese. Allow the cheeses to melt into a thick, creamy sauce.
- Add the reserved pasta water as needed for the right texture.
- Add the cooked rigatoni and toss to coat in the cheesy garlic butter sauce.
- Serve hot, garnished with fresh parsley and a little extra Parmesan if desired.
