- 2 boneless, skinless chicken breasts, cut into strips
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp dried Italian herbs
- Salt & black pepper to taste
- 1 cup jasmine or long grain white rice
- 2 cups water
- 2 cups fresh broccoli florets
- 1/2 tsp dried oregano (for garnish, optional)
Instructions
- Bring water to a boil in a pot. Once boiling, add the rice and a pinch of salt. Cover the pot and let it simmer until the rice is cooked.
- While the rice cooks, steam the broccoli florets in a separate pot or steamer until they are bright green and fork-tender.
- In a skillet, heat the olive oil over medium heat. Add the chicken strips, and season them with salt, pepper, minced garlic, crushed red pepper flakes, and Italian herbs. Cook until the chicken is golden brown and cooked through.
- Once the chicken is cooked, add the butter to the pan. Stir it around to melt and coat the chicken in the delicious garlicky sauce.
- To serve, pile the cooked rice on a plate, top it with the garlic butter chicken, and add the steamed broccoli on the side. Garnish with a sprinkle of dried oregano if desired.
