- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tbsp Cajun seasoning
- 1 tbsp paprika
- 4 tbsp butter, divided
- 4 cloves garlic, minced
- 1 package (20 oz) refrigerated cheese tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 8 oz mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tbsp chopped chives, for garnish
- 1 tbsp chopped fresh oregano, for garnish
Instructions
- Toss the chicken pieces with Cajun seasoning and paprika.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Cook the chicken until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and bring to a simmer. Add cheese tortellini and cook according to package directions, about 3-5 minutes.
- Reduce heat to low. Stir in the heavy cream and cream cheese until smooth.
- Add shredded mozzarella and grated Parmesan cheese, stirring until melted and creamy. Season with salt and black pepper.
- Return cooked chicken to the skillet, stirring to combine with tortellini and sauce.
- Serve immediately, garnished with chopped chives and fresh oregano.
Notes
Let the chicken marinate in the Cajun seasoning for extra flavor. Use fresh tortellini for softer texture.
