Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • 12 oz fettuccine or pasta of your choice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • Extra garlic butter (optional, for drizzling)

Instructions

  1. Bring a large pot of salted water to a boil, add the pasta and cook until al dente according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat, add the chicken pieces and season with salt, pepper, and Italian seasoning. Sear the chicken for about 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, lower heat to medium and add the butter. Once melted, stir in the minced garlic, cooking for about 30 seconds.
  4. Return the chicken to the skillet, tossing to coat in garlic butter. Set off heat while making the pasta sauce.
  5. In another skillet, melt 2 tablespoons of butter over medium heat, add remaining garlic and cook briefly.
  6. Pour in heavy cream and chicken broth, stirring gently, and let come to a soft simmer.
  7. Gradually add the Parmesan cheese, whisking until smooth and creamy. Season with salt and pepper to taste.
  8. Add cooked pasta to the cream sauce and toss well to coat.
  9. Serve warm, garnished with garlic butter chicken and chopped parsley. Drizzle with extra garlic butter if desired.

Notes

Feel free to customize with veggies like peppers or mushrooms. Whole grain or gluten-free pasta can also be used.
