Ingredients

- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- Salt & pepper
- 1 tsp Italian seasoning
- 3 tbsp butter
- 4 garlic cloves, minced
- 1 tbsp lemon juice (optional)
- 8 oz spaghetti
- 1 tbsp butter
- 1 garlic clove, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan
- Salt & pepper to taste
- 1/4 cup pasta water (reserved)
- Fresh parsley, chopped for garnish
- Extra Parmesan (optional)
Instructions
- Boil spaghetti until al dente. Drain, reserving 1/4 cup pasta water.
- Season and sear chicken in olive oil until golden. Add butter, garlic, and lemon juice. Sauté until glazed and cooked through.
- In the same pasta pot, melt butter, sauté garlic, then stir in cream, cheese, salt, pepper, and pasta water. Simmer until smooth.
- Toss pasta in the sauce, plate with chicken on top, and garnish with parsley.
Notes
Make sure to not overcook the chicken; it should be juicy and tender. Reserve some pasta water to help make the sauce creamy. Feel free to add vegetables such as spinach or broccoli for extra nutrition.
