  • 2/3 cup rainbow sprinkles
  • 16 oz. cream cheese, room temperature (for frosting)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 1 tablespoon vanilla extract (for frosting)
  • 33 1/2 cups powdered sugar
  • 1/2 cup rainbow sprinkles (for frosting, plus more for topping)

Instructions

  1. Prepare the Cheesecake: Beat the cream cheese until smooth. Add sugar and flour, mixing well. Whisk in the eggs and yolk until combined. Add the sour cream and vanilla, mix until smooth. Pour into a springform pan and bake at 325°F for about 30-35 minutes. Cool and freeze overnight.
  2. Prepare the Cake: Preheat the oven to 350°F. Grease and flour the cake pans. Mix the dry ingredients in a bowl. Cream the butter and sugar together, then add the whole egg and egg whites. Mix alternately with milk and sour cream, then fold in the sprinkles. Bake in prepared pans for 20-25 minutes.
  3. Prepare the Frosting: Cream the butter and cream cheese together. Mix in vanilla and powdered sugar until fluffy, then fold in the sprinkles.
