- 1 cup butter (2 sticks)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 (8-oz) cup canned pumpkin
- 2 teaspoons vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon kosher salt
- 1 teaspoon baking powder
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9×13 inch pan with nonstick spray or line it with parchment paper.
- In a medium saucepan, melt the butter over medium heat. Add the pumpkin pie spice and let it toast for a few seconds. Remove from heat.
- Stir in granulated sugar and brown sugar until combined. Add pumpkin puree, vanilla, and kosher salt.
- Add the egg, stirring quickly to avoid curdling.
- Add flour and baking powder, mixing until most lumps are gone.
- Pour the batter into the prepared pan and sprinkle chocolate chips on top, folding them in gently.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before slicing or enjoy warm.
Notes
These bars can be served warm or chilled and are delicious on their own or with ice cream and caramel sauce.
