Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup cold butter
  • 12 tbsp cold water
  • 1 cup milk
  • 1 tsp vanilla extract
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • Fresh fruit (strawberries, kiwis, mangoes, blackberries)
  • Apricot jam (optional)
  • Water (optional)

Instructions

  1. In a bowl, mix flour, powdered sugar, and cold butter. Add cold water gradually until a dough forms. Chill, roll out, and bake in a preheated oven at 375°F (190°C) for 25 minutes.
  2. For the pastry cream, heat milk with vanilla. In a separate bowl, whisk egg yolks, sugar, and cornstarch. Combine both mixtures and cook over low heat until thickened. Stir in butter and chill.
  3. Assemble the tart by filling the baked shell with cooled cream and topping with fresh fruit. Optionally, brush with a glaze made from apricot jam and water.
  4. Chill the assembled tart until ready to serve.

Notes

Ensure butter is very cold for a flaky crust. Use a mix of fruits for a vibrant presentation.
