- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold butter
- 1–2 tbsp cold water
- 1 cup milk
- 1 tsp vanilla extract
- 3 egg yolks
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp butter
- Fresh fruit (strawberries, kiwis, mangoes, blackberries)
- Apricot jam (optional)
- Water (optional)
Instructions
- In a bowl, mix flour, powdered sugar, and cold butter. Add cold water gradually until a dough forms. Chill, roll out, and bake in a preheated oven at 375°F (190°C) for 25 minutes.
- For the pastry cream, heat milk with vanilla. In a separate bowl, whisk egg yolks, sugar, and cornstarch. Combine both mixtures and cook over low heat until thickened. Stir in butter and chill.
- Assemble the tart by filling the baked shell with cooled cream and topping with fresh fruit. Optionally, brush with a glaze made from apricot jam and water.
- Chill the assembled tart until ready to serve.
Notes
Ensure butter is very cold for a flaky crust. Use a mix of fruits for a vibrant presentation.
