- 3/4 cup granulated sugar

- 2 envelopes unflavored gelatin

- 1 1/2 cups halved seedless grapes
- 1 (11 oz.) can mandarin oranges, drained and cut in half
- 1 (10 oz.) jar maraschino cherries, drained and roughly chopped
- 1/2 cup finely chopped pecans
- 2 cups whipped topping
Instructions
- Prepare the Crust: In a bowl, mix the vanilla wafer crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Set aside.
- Make the Filling: In a saucepan, cook the drained pineapple with the sugar over medium heat. In a separate bowl, dissolve the gelatin in cold water and then add it to the pineapple mixture. Reduce the heat and stir in the cubed cream cheese until smooth. Let this mixture cool.
- Add the Fruits and Nuts: Once the mixture has cooled, gently fold in the halved grapes, mandarin oranges, chopped maraschino cherries, and chopped pecans.
- Fold in the Whipped Topping: Carefully fold in the whipped topping until fully combined.
- Assemble the Cheesecake: Pour the filling over the prepared crust. Refrigerate overnight to let it set.
- Serve: Remove the cheesecake from the pan, slice, and serve it chilled.
