- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 600g (3 cups) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 tsp lemon juice
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup kiwi, peeled and sliced
- 1 cup pineapple chunks
- 1/2 cup mango, diced
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let it cool.
- In another bowl, beat the cream cheese and powdered sugar until smooth. Add the vanilla extract and lemon juice, mixing until fully combined.
- Whip the heavy cream in a separate bowl until soft peaks form. Fold this whipped cream into the cream cheese mixture.
- Spread the cheesecake filling over the cooled crust. Refrigerate for at least 4 hours or overnight for best results.
- Before serving, top the cheesecake with fresh fruit of your choice and enjoy!
Notes
Make sure your cream cheese is at room temperature for easier mixing. Feel free to use any seasonal fruits you have on hand.
