  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)
  • Frosting (optional, such as cream cheese frosting or whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the drained fruit cocktail, granulated sugar, all-purpose flour, baking soda, and salt.
  3. In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until well blended.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. If desired, fold in the chopped nuts.
  5. Pour the batter into the prepared baking pan and smooth out the top.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
