- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 tbsp all-purpose flour (optional)
- 1 cup mixed fresh fruit (such as strawberries, blueberries, raspberries, kiwi, and mango)
- 2 tbsp fruit preserves or jam (apricot or strawberry)
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and vanilla extract; press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until slightly golden. Let it cool.
- In a large mixing bowl, beat the cream cheese and sugar until smooth. Add vanilla and mix. Add eggs one at a time, mixing well after each addition. Mix in sour cream and heavy cream until smooth.
- Pour mixture over the cooled crust and bake for 50-60 minutes until the edges are set.
- Cool in the oven for 1 hour, then refrigerate for at least 4 hours.
- For the topping, wash and slice the fresh fruit; heat the fruit preserves until thin.
- Remove the cheesecake from the pan, top with fruit, and brush with preserves. Slice and serve chilled.
Notes
For best results, ensure cream cheese is at room temperature. Store leftovers in the refrigerator for 3 to 5 days.
