  • 1 cup pineapple juice
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz) bag sweetened coconut
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil, for frying

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Coconut milk, for adjusting sauce consistency

Instructions

  1. Place pineapple rings in a bowl and cover with pineapple juice. Let soak for 1 hour, then drain and pat dry with paper towels.
  2. Set up three bowls: one with flour, one with sweetened coconut, and one with whisked eggs and coconut milk.
  3. Dip each pineapple ring first in flour, then in the egg mixture, and finally in the coconut, pressing to coat well.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry each ring for about 1 minute per side until golden, then drain on paper towels.
  5. In a bowl, mix softened cream cheese and powdered sugar until smooth. Stir in vanilla and adjust with coconut milk for desired creaminess.

Notes

Keep oil at a steady 350°F to avoid overly oily rings. For added crispiness, double coat each pineapple ring with flour and coconut. You can also experiment with different dipping sauces, like caramel or chocolate.
