- 1 cup pineapple juice
- 1 1/2 cups all-purpose flour
- 1 (10-oz) bag sweetened coconut
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil, for frying
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Coconut milk, for adjusting sauce consistency
Instructions
- Place pineapple rings in a bowl and cover with pineapple juice. Let soak for 1 hour, then drain and pat dry with paper towels.
- Set up three bowls: one with flour, one with sweetened coconut, and one with whisked eggs and coconut milk.
- Dip each pineapple ring first in flour, then in the egg mixture, and finally in the coconut, pressing to coat well.
- Heat vegetable oil in a deep pot to 350°F (175°C). Fry each ring for about 1 minute per side until golden, then drain on paper towels.
- In a bowl, mix softened cream cheese and powdered sugar until smooth. Stir in vanilla and adjust with coconut milk for desired creaminess.
Notes
Keep oil at a steady 350°F to avoid overly oily rings. For added crispiness, double coat each pineapple ring with flour and coconut. You can also experiment with different dipping sauces, like caramel or chocolate.
