Description

A classic Southern dish featuring crispy fried catfish, crunchy sweet potato fries, and fluffy hushpuppies.


Ingredients

  • 4 catfish filets
  • 1 cup cornmeal
  • 1 cup flour
  • 2 eggs
  • 1/2 cup milk
  • 2 large sweet potatoes
  • Oil (for frying)
  • 1 cup cornmeal (for hushpuppies)
  • 1 onion (optional)
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oil in a deep fryer or heavy skillet to 350°F (175°C).
  2. In a bowl, mix cornmeal, flour, salt, and pepper.
  3. Dip catfish filets in a mixture of eggs and milk, then coat with the cornmeal mixture.
  4. Fry the filets for about 4-5 minutes on each side until golden brown.
  5. For sweet potato fries, cut sweet potatoes into fries, toss with oil, salt, and pepper, and bake at 425°F (220°C) for 20-25 minutes.
  6. For hushpuppies, mix cornmeal, baking powder, salt, and chopped onions (if using) with water to form a batter. Drop spoonfuls into the hot oil and fry until golden.
  7. Serve all items together for a delicious Sunday lunch.

Notes

Store leftovers in separate airtight containers for up to 2 days and reheat in the oven for best results.
