Ingredients

  • 1 graham cracker crust (store-bought or homemade)
  • 1/2 cup strawberry puree
  • 6 tablespoons pure cane sugar
  • 1 1/4 tablespoons corn starch
  • 1/8 cup water
  • 32 ounces cream cheese, softened
  • 3/4 cup pure cane sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 4 large egg yolks

Instructions

  1. Prepare the Graham Crust: In a 9-inch springform pan, make or place your graham cracker crust and spray the sides of the pan with cooking spray. Line the outside of the pan with aluminum foil to prevent water from seeping in during baking.
  2. Make the Strawberry Sauce: In a small glass measuring cup, whisk together the cornstarch and water. In a medium saucepan, combine the cornstarch mixture with sugar and strawberry puree. Bring to a boil over low to medium heat, stirring constantly until thickened. Cool to room temperature.
  3. Preheat oven: Set your oven to 325°F (163°C). In a mixing bowl, beat the cream cheese, sugar, vanilla extract, and almond extract until smooth. Add the egg yolks and mix well.
  4. Combine Layers: Pour half the cheesecake batter into the crust. Spoon dollops of strawberry sauce on top and swirl with a knife. Pour the remaining batter into the crust and add more sauce, swirling again.
  5. Bake: Place your cheesecake in a water bath and bake for 1 hour and 20 minutes. Let it cool in the oven with the door slightly open to prevent cracking.
  6. Cool and Refrigerate: Cool completely at room temperature, then refrigerate for at least 6 hours.
  7. Serve: Serve chilled, topped with whipped cream and fresh strawberries.

Notes

Make sure the cream cheese is softened before mixing to avoid lumps. Use fresh strawberries for the best flavor.
