A visually stunning cake that celebrates fresh fruits with layers of sponge cake and whipped cream, perfect for any occasion.

- 3 layers of sponge cake (store-bought or homemade)
- 1 cup strawberries, hulled and sliced
- 1 cup green grapes, halved
- 1 cup pineapple chunks
- 1 cup watermelon, cubed
- 2 kiwis, peeled and sliced
- 1 cup cherries, pitted
- 1 cup blueberries
- 1 lemon, sliced into thin rounds for garnish
- Fresh mint leaves for garnish
- 2 cups whipped cream or whipped topping
- 2 tablespoons honey (optional)
Instructions
- Prepare the Cake Layers: Bake or purchase three layers of sponge cake. Allow them to cool completely.
- Prepare the Fruits: Wash and dry all fruits. Slice strawberries, halve grapes, chunk pineapple, cube watermelon, peel and slice kiwis, and pit cherries.
- Assemble the Cake: Place the first sponge cake layer on a serving platter. Spread whipped cream over the cake. Add a layer of mixed fruits. Place the second sponge cake layer on top, spread whipped cream, and add another layer of mixed fruits. Place the third sponge cake layer on top, spread whipped cream over the top and sides, then decorate with mixed fruits, lemon slices, and mint leaves.
- Optional Honey Drizzle: Drizzle honey over the top for added sweetness.

Serve chilled. Store leftovers in the refrigerator for up to 2-3 days.
