Description

A stunning three-tiered cake featuring moist layers, rich frosting, and a variety of fresh fruits, perfect for any special occasion.


Ingredients

  • 3 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup pineapple, diced
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly among the three prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Place one cake layer on a serving plate. Spread a layer of creamy frosting over the top. Arrange a layer of sliced strawberries, blueberries, raspberries, kiwi, and pineapple on top of the frosting.
  11. Place the second cake layer on top and repeat the process with frosting and fruit.
  12. Place the third cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
  13. Arrange additional fresh fruit on top of the cake and garnish with fresh mint leaves if desired.
  14. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.

Notes

Store any leftover cake in an airtight container in the refrigerator. It will stay fresh for up to 3 days.
