- 3 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup whole milk
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup kiwi, peeled and sliced
- 1 cup pineapple, diced
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among the three prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Place one cake layer on a serving plate. Spread a layer of creamy frosting over the top. Arrange a layer of sliced strawberries, blueberries, raspberries, kiwi, and pineapple on top of the frosting.
- Place the second cake layer on top and repeat the process with frosting and fruit.
- Place the third cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
- Arrange additional fresh fruit on top of the cake and garnish with fresh mint leaves if desired.
- Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
Notes
Store any leftover cake in an airtight container in the refrigerator. It will stay fresh for up to 3 days.
