Ingredients

  • 2 eggs
  • 1 slice whole-grain toast
  • 1/4 cup Greek yogurt
  • 1/4 cucumber, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 carrot, sliced into sticks
  • 1/2 celery stalk, chopped
  • 68 raw almonds
  • Salt & pepper to taste
  • Optional: garlic powder, lemon juice, olive oil

Instructions

  1. Mix chopped cucumber with Greek yogurt, a pinch of salt, and garlic powder; spread it over the toast.
  2. Cook the eggs low and slow, adding a pinch of salt and pepper.
  3. Slice bell pepper, carrot, and celery into sticks or chunks.
  4. Toss a handful of almonds onto the plate.
  5. Arrange everything neatly for a vibrant, well-balanced meal.

Notes

For a vegan option, replace the eggs with tofu scramble. Use any veggies you like; cherry tomatoes or radishes can be great additions.
