French Onion Meatloaf

Description

A delicious twist on classic meatloaf with savory flavors of French onion soup, ground beef, Swiss cheese, and caramelized onions.


Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded Swiss cheese
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp flour (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper until well combined.
  3. Flatten the meat mixture into a rectangle on a flat surface. Sprinkle the Swiss cheese down the center, then roll the meat mixture into a loaf shape, sealing the edges. Place it in a greased baking dish.
  4. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, heat the butter and olive oil in a skillet over medium heat. Add the sliced onions and cook for 15-20 minutes until golden brown.
  6. Once the onions are caramelized, add the beef broth to the skillet. Let it simmer for 5 minutes. If you want a thicker sauce, whisk in the flour and cook for another 2 minutes.
  7. After the meatloaf is cooked, pour the onion sauce over it and garnish with fresh parsley before serving.

Notes

Finely slice the onions for even cooking. You can substitute different types of cheese such as Gruyère or Monterey Jack. For extra flavor, add herbs like thyme or rosemary to the meat mixture.
