French Kiss Chocolate Truffle Cherry Cheesecake

Description

A rich and creamy cheesecake combining chocolate, sweet cherries, and a crunchy graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1 cup fresh or frozen cherries, pitted and halved
  • 12 oz high-quality dark chocolate, chopped
  • 1 cup heavy cream
  • 1 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then cool completely.
  2. In a large mixing bowl, cream together the softened cream cheese and granulated sugar until light and fluffy. Beat in the eggs one at a time. Next, stir in the vanilla extract and salt. Finally, fold in the sour cream and chopped cherries.
  3. Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes. Allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours until set.
  4. In a saucepan, heat the heavy cream until it simmers. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes. Stir until smooth, then add the unsalted butter and mix well.
  5. Once the cheesecake is chilled, pour the chocolate ganache over the top and refrigerate for at least 1 hour until it sets. Slice and serve topped with extra cherries if desired.

Notes

Make sure all your ingredients, especially the cream cheese, are at room temperature for easier mixing. Don’t overbeat the eggs to prevent cracks in the cheesecake.
