A rich and creamy cheesecake layered with chocolate ganache and sweet cherries, perfect for any occasion.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup sour cream
- 1 cup fresh or frozen cherries, pitted and halved
- 12 oz high-quality dark chocolate, chopped
- 1 cup heavy cream
- 1 tbsp unsalted butter
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool completely.
- In a large mixing bowl, cream together softened cream cheese and granulated sugar until light and fluffy. Beat in eggs one at a time. Stir in vanilla extract and salt, then fold in sour cream and chopped cherries.
- Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes. Allow to cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours until set.
- In a saucepan, heat heavy cream until it simmers. Pour hot cream over chopped chocolate and let sit for 5 minutes. Stir until smooth, then mix in unsalted butter.
- Once cheesecake is chilled, pour chocolate ganache over the top and refrigerate for at least 1 hour until set. Slice and serve topped with extra cherries if desired.
Notes
Serve chilled and consider garnishing with extra cherries or whipped cream.
