A deliciously fluffy and healthy cake made with apples and bananas, perfect for breakfast, snacks, or dessert.
Ingredients

- 85g oat flour
- 2 fresh apples
- 1 very ripe banana
- 2 eggs
- 7g baking powder
- 1 pinch of salt
- 1/2 tsp ground ginger
- 1 tbsp stevia or equivalent natural sweetener
Instructions
- Preheat the oven to 180°C (350°F) and line a cake tin with parchment paper.
- Mash the bananas and finely chop the apples in a mixing bowl.
- Add the eggs to the bowl and mix well.
- In another bowl, combine the oat flour, baking powder, salt, and ground ginger.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared cake tin.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Serve and enjoy your healthy cake!
Notes
Use very ripe bananas for the best flavor. You can substitute oat flour with whole wheat flour if desired.
