Description

A deliciously fluffy and healthy cake made with apples and bananas, perfect for breakfast, snacks, or dessert.


Ingredients

  • 85g oat flour
  • 2 fresh apples
  • 1 very ripe banana
  • 2 eggs
  • 7g baking powder
  • 1 pinch of salt
  • 1/2 tsp ground ginger
  • 1 tbsp stevia or equivalent natural sweetener

Instructions

  1. Preheat the oven to 180°C (350°F) and line a cake tin with parchment paper.
  2. Mash the bananas and finely chop the apples in a mixing bowl.
  3. Add the eggs to the bowl and mix well.
  4. In another bowl, combine the oat flour, baking powder, salt, and ground ginger.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cake tin.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Serve and enjoy your healthy cake!

Notes

Use very ripe bananas for the best flavor. You can substitute oat flour with whole wheat flour if desired.
