Instructions

  1. If using cream cheese, allow it to reach room temperature. If using coconut cream, ensure it is thick and creamy.
  2. Remove stems from strawberries and mash or blend until they form a smooth purée.
  3. In a blender or with a hand mixer, combine the puréed strawberries with the cream cheese or coconut cream, yogurt, powdered sugar, and optional vanilla bean paste. Blend until completely smooth.
  4. Transfer the mixture into serving dishes.
  5. Refrigerate for at least 1-2 hours to allow the mousse to thicken.
