Ingredients

  • 23 large eggs
  • 1 tbsp milk (optional, for fluffiness)
  • 1 tbsp butter
  • Salt & pepper to taste
  • 1 cup sliced mushrooms (button or cremini)
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • 1 cup broccoli or broccolini, steamed or sautéed
  • 1/2 tsp olive oil
  • 1/2 avocado, sliced
  • Pinch of flaky salt or sea salt
  • Cracked black pepper

Instructions

  1. In a pan over medium heat, add olive oil and mushrooms. Season with garlic powder, salt, and pepper. Cook for 5–6 minutes until browned and tender.
  2. Steam broccoli for 4–5 minutes until tender or sauté with olive oil, salt, and pepper.
  3. In a bowl, whisk eggs with a splash of milk. Melt butter in a skillet on low heat, then pour in the eggs. Stir slowly until fluffy and soft.
  4. Thinly slice the avocado and sprinkle with sea salt and cracked pepper.
  5. Plate the fluffy eggs, sautéed mushrooms, broccoli, and avocado together. Top the eggs with pepper and a drizzle of olive oil if desired.

Notes

For best flavor, use fresh ingredients. Don’t rush cooking; slow cooking helps the eggs stay fluffy. Experiment with different vegetables and herbs to suit your taste.
