- 1 ripe banana, mashed
- 1/2 cup cottage cheese
- 2 large eggs
- 1/2 cup oat flour (or blended rolled oats)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
Instructions
- In a bowl, mix the mashed banana and cottage cheese until combined.
- Add the eggs and mix well.
- In a separate bowl, combine the oat flour, baking powder, and vanilla extract.
- Gradually add the dry ingredients to the banana mixture and stir until just combined.
- Heat a non-stick skillet over medium heat and pour batter to form pancakes.
- Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- Serve warm and enjoy!
Notes
Serve with maple syrup, honey, or fresh fruit for added flavor. Can store leftover pancakes in the refrigerator for up to three days.
