Ingredients

  • 1/2 cup cottage cheese
  • 2 large eggs

Instructions

  1. In a bowl, mix the mashed banana and cottage cheese until combined.
  2. Add the eggs and mix well.
  3. In a separate bowl, combine the oat flour, baking powder, and vanilla extract.
  4. Gradually add the dry ingredients to the banana mixture and stir until just combined.
  5. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
