A rich and moist gluten-free cake with a delightful hint of orange and a luscious chocolate ganache.
Ingredients

- 1/2 cup unsalted butter
- 4 ounces dark chocolate, chopped
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 1/2 teaspoon orange extract
- 1 tablespoon orange zest
- 1/4 teaspoon salt
- For the ganache: 1/2 cup heavy cream
- 4 ounces dark chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour an 8-inch square baking pan.
- In a double boiler or microwave, melt the butter and chopped chocolate together until smooth. Let it cool slightly.
- In a separate bowl, whisk the egg yolks with the sugar until pale and fluffy. Stir in the orange extract and orange zest.
- Fold the melted chocolate mixture into the egg yolk mixture.
- In another bowl, beat the egg whites with the salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture in two batches until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan before inverting it onto a serving plate.
- To make the ganache, heat the heavy cream in a small saucepan until it simmers. Pour the hot cream over the chopped chocolate and let it sit for a few minutes. Whisk until smooth and glossy.
- Pour the ganache over the cooled cake and spread it evenly. Garnish with an orange slice and orange zest if desired.
Notes
For best flavor, use high-quality chocolate. Allow the cake to cool completely before adding ganache.
