Ingredients

  • 1 tablespoon Olive oil
  • 1/2 cup carrots, peeled and sliced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 3/4 cup bell peppers, sliced (red and yellow)
  • 1 cup snow peas, trimmed
  • 1/2 cup water chestnuts, drained and sliced

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add the carrots and cook for about 2 minutes.
  3. Add the mushrooms and broccoli, stir-fry for another 2-3 minutes.
  4. Add the bell peppers and snow peas, continuing to stir-fry for another 2-3 minutes.
  5. Add the water chestnuts and stir until everything is well mixed and heated through.
  6. Serve hot.

Notes

For a heartier dish, add tofu, chicken, or your favorite protein. You can also drizzle with soy sauce or add sesame seeds for extra flavor.
