- 1 tablespoon Olive oil
- 1/2 cup carrots, peeled and sliced
- 1 cup mushrooms, sliced
- 1 cup broccoli florets
- 3/4 cup bell peppers, sliced (red and yellow)
- 1 cup snow peas, trimmed
- 1/2 cup water chestnuts, drained and sliced
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the carrots and cook for about 2 minutes.
- Add the mushrooms and broccoli, stir-fry for another 2-3 minutes.
- Add the bell peppers and snow peas, continuing to stir-fry for another 2-3 minutes.
- Add the water chestnuts and stir until everything is well mixed and heated through.
- Serve hot.
Notes
For a heartier dish, add tofu, chicken, or your favorite protein. You can also drizzle with soy sauce or add sesame seeds for extra flavor.
