Ingredients

- 500 g fresh white fish (cod, tilapia, or haddock), cut into bite-sized pieces
- 400 ml coconut milk
- 2 limes, juice and zest
- 3 cloves garlic, finely chopped
- 2 cm piece of fresh ginger, grated
- 2 cups vegetable or fish stock
Instructions
- In a pot, heat the vegetable or fish stock and bring to a simmer.
- Add the chopped garlic and grated ginger, and cook for 2-3 minutes.
- Stir in the coconut milk, lime juice, and zest.
- Add the fish pieces and cook until they are opaque and cooked through, about 5-7 minutes.
- Season with salt and pepper to taste.
- Serve warm, garnished with additional lime zest if desired.
Notes
Serve with crusty bread or steamed rice for a complete meal. Adjust lime juice to taste for desired tanginess.
