Description

A delicious and comforting soup with a creamy coconut base and zesty lime flavors, perfect for a weeknight dinner.


Ingredients

  • 500 g fresh white fish (cod, tilapia, or haddock), cut into bite-sized pieces
  • 400 ml coconut milk
  • 2 limes, juice and zest
  • 3 cloves garlic, finely chopped
  • 2 cm piece of fresh ginger, grated
  • 2 cups vegetable or fish stock

Instructions

  1. In a pot, heat the vegetable or fish stock and bring to a simmer.
  2. Add the chopped garlic and grated ginger, and cook for 2-3 minutes.
  3. Stir in the coconut milk, lime juice, and zest.
  4. Add the fish pieces and cook until they are opaque and cooked through, about 5-7 minutes.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with additional lime zest if desired.

Notes

Serve with crusty bread or steamed rice for a complete meal. Adjust lime juice to taste for desired tanginess.
