A delicious and refreshing soup made with fresh fish, creamy coconut milk, and zesty lime.
Ingredients

- 500 g fresh white fish (e.g., cod, tilapia, or haddock), cut into bite-sized pieces
- 400 ml coconut milk
- 2 limes, juice and zest
- 3 cloves garlic, finely chopped
- 2 cm piece of fresh ginger, grated
- 2 cups vegetable or fish stock
Instructions
- In a large pot, heat a little oil over medium heat. Add the chopped garlic and grated ginger, sautéing until fragrant.
- Pour in the vegetable or fish stock and bring to a simmer.
- Add the coconut milk, lime juice, and lime zest.
- Once the mixture is simmering, gently add the pieces of fish.
- Cook for about 5-7 minutes until the fish is cooked through and flaky.
- Taste and adjust seasoning if necessary.
- Serve hot with additional lime wedges on the side.
Notes
Use fresh fish for best results. Adjust lime juice and zest to taste, and consider adding fresh herbs for more flavor.
