- 8–10 mini sweet peppers (or 4 small bell peppers), halved and deseeded
- 1 tbsp olive oil
- Pinch of salt and pepper
- 3/4 cup crumbled feta cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the crumbled feta cheese with olive oil, salt, and pepper.
- Stuff the halved peppers with the feta mixture.
- Place the stuffed peppers on a baking sheet.
- Bake for 15-20 minutes until the peppers are tender and the cheese is warm.
- Serve warm.
Notes
For extra flavor, add herbs like oregano or basil to the feta mixture. You can also mix in chopped olives or sun-dried tomatoes for a Mediterranean twist.
