A delicious twist on the classic grilled cheese, featuring creamy feta cheese and fresh spinach.
Ingredients

- 4 slices hearty bread (sourdough or whole grain)
- 1 tbsp olive oil
- 1 garlic clove, minced
- 4 oz feta cheese, crumbled
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the minced garlic and sauté until fragrant.
- Place one slice of bread in the skillet and layer it with feta cheese and spinach. Season with salt and pepper.
- Top with another slice of bread.
- Cook until the bottom slice is golden brown, then flip and cook the other side until golden and the cheese is melted.
- Remove from heat, slice, and serve warm.
Notes
Use good quality feta cheese for better flavor. For extra crunch, add slices of tomato or avocado.
