Ingredients

  • 2 cups cooked rigatoni (cooled)
  • 1 cup baby spinach
  • 1/2 cup feta cheese, cubed
  • 1/3 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt & black pepper, to taste

Instructions

  1. Whisk the olive oil, lemon juice, Dijon mustard, salt, and black pepper together until well mixed.
  2. In a large bowl, combine the cooled rigatoni, baby spinach, feta cheese, dried cranberries, and chopped walnuts.
  3. Drizzle the dressing over the salad and toss gently to combine all the ingredients.
  4. Chill the salad in the refrigerator for 15 minutes before serving to enhance the flavors.

Notes
