Ingredients

- 2 cups cooked rigatoni (cooled)
- 1 cup baby spinach
- 1/2 cup feta cheese, cubed
- 1/3 cup dried cranberries
- 1/4 cup chopped walnuts
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & black pepper, to taste
Instructions
- Whisk the olive oil, lemon juice, Dijon mustard, salt, and black pepper together until well mixed.
- In a large bowl, combine the cooled rigatoni, baby spinach, feta cheese, dried cranberries, and chopped walnuts.
- Drizzle the dressing over the salad and toss gently to combine all the ingredients.
- Chill the salad in the refrigerator for 15 minutes before serving to enhance the flavors.
Notes
For added crunch, add walnuts right before serving. Consider other add-ins like cherry tomatoes or grilled chicken for extra flavor.
