Description

A delightful dessert shaped like a high-heeled shoe, combining sponge cake with fresh fruit and whipped cream.


Ingredients

  • 4 eggs
  • 120 g sugar
  • 120 g flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 300 ml heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for the cream
  • Kiwi, mango, blueberries, raspberries, red currants
  • Edible flowers
  • Mint leaves
  • Colored red shortcrust pastry for decoration
  • Dark chocolate for the logo
  • Red fruit coulis

Instructions

  1. Preheat the oven to 180°C.
  2. Beat the eggs with the sugar until the mixture triples in volume.
  3. Gently fold in the sifted flour, baking powder, and salt.
  4. Pour the batter into a rectangular mold and bake for 20 minutes. Let it cool afterward.
  5. Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Cut the sponge cake into even slices.
  7. Layer the sponge, whipped cream, and colorful fruits.
  8. Use cooked and cut shortcrust pastry to create the shape of a shoe.
  9. Assemble the cake in the shape of a heel with visible inner layers.
  10. Decorate with edible flowers, fresh fruits, mint leaves, and a dark chocolate logo.

Notes

Best served chilled and can be decorated with extra fruit coulis for presentation.
