- 4 eggs
- 120 g sugar
- 120 g flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 300 ml heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract for the cream
- Kiwi, mango, blueberries, raspberries, red currants
- Edible flowers
- Mint leaves
- Colored red shortcrust pastry for decoration
- Dark chocolate for the logo
- Red fruit coulis
Instructions
- Preheat the oven to 180°C.
- Beat the eggs with the sugar until the mixture triples in volume.
- Gently fold in the sifted flour, baking powder, and salt.
- Pour the batter into a rectangular mold and bake for 20 minutes. Let it cool afterward.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Cut the sponge cake into even slices.
- Layer the sponge, whipped cream, and colorful fruits.
- Use cooked and cut shortcrust pastry to create the shape of a shoe.
- Assemble the cake in the shape of a heel with visible inner layers.
- Decorate with edible flowers, fresh fruits, mint leaves, and a dark chocolate logo.
Notes
Best served chilled and can be decorated with extra fruit coulis for presentation.
