Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, boil the cubed potatoes until tender. Drain and set aside.
- In a baking dish, combine the cooked potatoes, broccoli florets, cherry tomatoes, and chopped onion.
- Mix in the shredded cheddar cheese, ensuring everything is evenly coated.
- Cover the dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
