- 1 1⁄2 cups crushed digestive biscuits or graham crackers
- 1/2 cup mixed nuts (such as almonds, walnuts, or pecans), finely chopped
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup heavy cream
- 1/2 cup fresh orange juice
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 teaspoon orange zest (optional)
- Fresh yellow raspberries (for garnish)
- Edible flowers (for garnish)
- Fresh mint leaves (for garnish)
- Edible pearls (optional, for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix together crushed biscuits, chopped nuts, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan and bake for 10-12 minutes until golden. Let cool.
- In a large mixing bowl, beat cream cheese and sugar together until smooth. Add vanilla extract and eggs, one at a time, beating well after each addition. Stir in heavy cream until smooth.
- Pour the cheesecake mixture over the cooled crust and bake for 25-30 minutes until just set. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the orange glaze, whisk together orange juice, sugar, and cornstarch in a saucepan over medium heat until thickened, about 5 minutes. Stir in zest if using. Let cool slightly.
- Pour the orange glaze over the chilled cheesecake, spreading it evenly. Refrigerate for another 30 minutes.
- Cut into squares and garnish with yellow raspberries, edible flowers, and mint leaves. Serve with additional orange sauce and edible pearls for presentation.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.
