  • 1 1/2 cups (150g) crushed digestive biscuits or graham crackers
  • 1/2 cup (60g) mixed nuts, finely chopped
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) fresh orange juice
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon orange zest (optional)
  • Fresh yellow raspberries (for garnish)
  • Edible flowers (for garnish)
  • Fresh mint leaves (for garnish)
  • Edible pearls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking pan with parchment paper.
  2. In a bowl, mix together the crushed biscuits, chopped nuts, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 10-12 minutes or until the crust is golden and set. Let it cool.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add vanilla extract and eggs, one at a time, beating well after each addition. Stir in the heavy cream until fully combined.
  4. Pour the cheesecake mixture over the cooled crust and bake for 25-30 minutes until the center is slightly jiggly. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. In a small saucepan, whisk together the orange juice, sugar, and cornstarch; heat until thickened. Stir in orange zest if using.
  6. Pour the orange glaze over the chilled cheesecake and return to the refrigerator for 30 minutes to set.
  7. Cut into squares and garnish with fresh raspberries, edible flowers, and mint leaves. Decorate the plate with additional orange sauce and edible pearls before serving.

Notes

Ensure cream cheese is at room temperature for easy mixing. Don’t over-bake the cheesecake; it should still have a slight jiggle in the center.
