A delightful cheesecake combining tropical mango and vibrant mixed berries, perfect for any gathering.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 cups mango puree
  • 1 tbsp gelatin
  • 1 cup mixed berries (raspberries, blackberries)
  • Fresh mint leaves for garnish

Instructions

  1. Mix graham cracker crumbs and melted butter together, then press this mixture into the bottom of a springform pan.
  2. In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
  3. Spread the cream cheese mixture evenly over the crust and refrigerate for 1 hour.
  4. Dissolve the gelatin in warm mango puree, then pour it over the set cream cheese layer.
  5. Refrigerate the cheesecake for 4 hours, or until fully set.
  6. Before serving, top with mixed berries and garnish with fresh mint leaves.

Notes

For easier slicing, run a knife under hot water before cutting. Use gluten-free graham cracker crumbs for a gluten-free version.
