Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 cups mango puree
- 1 tbsp gelatin
- 1 cup mixed berries (raspberries, blackberries)
- Fresh mint leaves for garnish
Instructions
- Mix graham cracker crumbs and melted butter together, then press this mixture into the bottom of a springform pan.
- In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly over the crust and refrigerate for 1 hour.
- Dissolve the gelatin in warm mango puree, then pour it over the set cream cheese layer.
- Refrigerate the cheesecake for 4 hours, or until fully set.
- Before serving, top with mixed berries and garnish with fresh mint leaves.
Notes
For easier slicing, run a knife under hot water before cutting. Use gluten-free graham cracker crumbs for a gluten-free version.
