- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 cups mango puree
- 1 tbsp gelatin
- 1 cup mixed berries (raspberries, blackberries)
- Fresh mint leaves for garnish
Instructions
- Mix graham cracker crumbs and melted butter in a bowl. Press this mixture into the bottom of a springform pan to create the crust.
- In another bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy.
- Spread the cream cheese mixture evenly over the crust and refrigerate for 1 hour to set.
- Dissolve the gelatin in warm mango puree. Once dissolved, pour this mixture over the cream cheese layer in the pan.
- Refrigerate the cheesecake for at least 4 hours or until it is fully set.
- Before serving, top the cheesecake with mixed berries and garnish with fresh mint leaves.
Notes
Ensure cream cheese is at room temperature for a smoother filling. Store any leftover cheesecake covered in the refrigerator and enjoy within 3-4 days.
