Description

A visually stunning cheesecake combining creamy filling with tropical mango and fresh mixed berries.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 cups mango puree
  • 1 tbsp gelatin
  • 1 cup mixed berries (raspberries, blackberries)
  • Fresh mint leaves for garnish

Instructions

  1. Mix graham cracker crumbs and melted butter in a bowl. Press this mixture into the bottom of a springform pan to create the crust.
  2. In another bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy.
  3. Spread the cream cheese mixture evenly over the crust and refrigerate for 1 hour to set.
  4. Dissolve the gelatin in warm mango puree. Once dissolved, pour this mixture over the cream cheese layer in the pan.
  5. Refrigerate the cheesecake for at least 4 hours or until it is fully set.
  6. Before serving, top the cheesecake with mixed berries and garnish with fresh mint leaves.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Store any leftover cheesecake covered in the refrigerator and enjoy within 3-4 days.
